Happy 2010!

Crazy to think that a new decade is upon us, no? Well, here's to ten more fantastic years!

One of my personal goals (er, resolutions I suppose?) is to start a big garden. I grew some chives, green onions, a few jalapenos this past year but nothing to be proud of really. Not that I plan on growing a 1200 pound pumpkin or entering contests or anything of that sort ;)

I placed my very first seed order today with Baker Creek Heirloom Seeds. I just couldn't wait anymore. Not sure why, since I can't really sow (even indoors) til February or so. But I've never been much of a patient person anyways.

Vanilla Cinnamon Cupcakes found via Baketastic
(FYI mine turned out more like muffins. Chewy, hard, muffins. Not happy.)

- 2 cups regular white sugar
- 2 sticks of butter (unsalted & room temp)
- 1 1/2 cups milk (I did about 2 tbps less...)
- 2 tbsp applesauce (this is why I did less milk)
- 4 eggs
- 3 cups flour (sifted)
- 1 1/2 tsp baking powder
- 2 tsps vanilla extract
- 2 tsps cinnamon

I creamed the butter and suagr together in my kitchenaid, I recommend cutting the butter into smaller pieces and not trying to cream or mix it while still in sticks. Trust me.

While the butter/sugar are mingling, whisk the eggs in a seperate small bowl, then when butter/sugar is mixed, add the eggs about one at a time. Once one egg is incorporated, add the next. When all 4 eggs are mixed in add in the vanilla.

In a seperate bowl, add the flour and add in the cinnamon, baking powder, and a small pinch of salt.Slowly add in the milk to the flour mixture. You now fold in the butter mixture into the flour mixture. Don't overmix! This is where I went wrong and it created more gluten and made the cupcakes chewy! If you need to, the recipe said you can add more milk to get your desired consistency. Then I took a 1/4 cup measuring cup and scooped into muffin tins with paper muffin wrappers in them. The original recipe didn't have a baking time or temp, so I tried them at 350 for 15 minutes, but then they weren't ready so they actually took about 25 or so minutes. When you can insert either a toothpick or a clean knife into the center of one and it comes out clean, then they are ready.

While the cupcakes were baking, I made my Applejack Caramel Sauce and Cream Cheese Frosting.

Cream Cheese Frosting from Sweetest Kitchen

Ingredients
1 8-ounce package cream cheese, softened and cut into small pieces
3 tablespoons unsalted butter, softened and cut into small pieces
3/4 teaspoons vanilla extract
2 1/2 cups sifted confectioners’ sugar
12 pecans (I did not use these)

Method
In a large bowl, on the medium speed of an electric mixer, beat the cream cheese and butter until smooth, about 3 minutes. Add the vanilla and beat well. Gradually add the sugar, 1/2 cup at a time, beating continuously until smooth and creamy. Cover and refrigerate icing for 2 to 3 hours, but no longer, to thicken before using. Frost cupcakes then top each cupcake with a pecan.

1 1/2 cups granulated sugar
1/4 cup water
3/4 cup heavy cream
Pinch salt
3 tablespoons apple brandy (recommended: Calvados) (I also used Applejack)
1/2 teaspoon pure vanilla extract

Place sugar and water in a medium saucepan and bring to a boil over high heat (do not stir), swirling the pot occasionally to even out the color, until amber in color, 10 to 12 minutes.
While the caramel is cooking. Place the heavy cream in a small pan and bring to a simmer over medium heat. Remove from heat and keep warm.

When the caramel has reached the desired color, slowly whisk in the heavy cream and salt and whisk until smooth. Remove from the heat and stir in the apple brandy and vanilla extract. Keep warm.

*This happened all so fast for me, so try to have the applejack & vanilla pre measured into a small bowl so you can just dump it in when the caramel is ready. This stuff is ridiculously good.

After cupcakes are cooled, frost them, and I drizzled the caramel sauce on top. Delicious!!

Daring Bakers September Challenge- Puff Pastry

The September 2009 Daring Bakers' challenge was hosted by Steph of A Whisk and a Spoon. She chose the French treat, Vols-au-Vent based on the Puff Pastry recipe by Michel Richard from the cookbook Baking With Julia by Dorie Greenspan.

My heart did a little flutter when I read the September challenge was puff pastry.
A little of fear and also of lust....

You see, I have this thing for baking. And pastries. And the thought of ME making my own puff pastry is quite scary. It's SO easy to go to the store and grab a frozen box of pre-made pastry, right?

Ahh well. I thought I'd give this a go and you know what, it wasn't THAT bad. It was time-consuming, mainly cause I did part one night, then refrigerated overnight, and continued the next day. And it was VERY messy. I am still getting flour out from under my nails...

I think the best partof the challenge was the free reign to do our own fillings :)

I did one sweet (Blackberries with a Triple Vanilla-Honey Mascarpone Cream) and a savory (Herbed Goat Cheese Whip.) After the puff pastry info, I'll give you the recipes for my fillings.

Puff pastry (aka pâte feuilletée) is something most of us usually buy at the grocery store, but in order to be really daring, we should make our own at least once in awhile, right? Kitchens should be getting cooler in the northern hemisphere, and are hopefully still cool-ish in the sourthern hempisphere, so I’m hoping you will all join me in making homemade puff pastry from Michel Richard’s recipe, as it appears in the book Baking with Julia by Dorie Greenspan. With our homemade puff we’ll be forming vols-au-vent cases to fill with anything we chose.

Puff pastry is in the ‘laminated dough” family, along with Danish dough and croissant dough. (In fact, if you participated in the Danish Braid challenge back in June 2008, then you already know the general procedure for working with laminated dough.) A laminated dough consists of a large block of butter (called the “beurrage”) that is enclosed in dough (called the “détrempe”). This dough/butter packet is called a “paton,” and is rolled and folded repeatedly (a process known as “turning”) to create the crisp, flaky, parallel layers you see when baked. Unlike Danish or croissant however, puff pastry dough contains no yeast in the détrempe, and relies solely aeration to achieve its high rise. The turning process creates hundreds of layers of butter and dough, with air trapped between each one. In the hot oven, water in the dough and the melting butter creates steam, which expands in the trapped air pockets, forcing the pastry to rise.

Once we have our puff pastry dough made and chilled, we are going to roll and form a portion of it into vols-au-vent, which are little puff pastry cases designed to hold a filling. I chose vols-au-vent specifically because I think they do a beautiful job of showing off the hundreds of flaky layers in the homemade puff. They can be made large enough for a full meal, or made small for little one-bite canapés, the choice is yours. Vols-au-vent are typically served hot and filled with a creamy savory filling (often poultry or seafood-based), but cold fillings, such as chicken or tuna salad, work, too. Whipped cream or pastry cream with fresh or stewed fruit often goes into sweet versions. If you are stumped for ideas for your filling(s), a quick on-line search or a glance at a traditional French cookbook will give you plenty of things to consider.

Equipment:
-food processor (will make mixing dough easy, but I imagine this can be done by hand as well)
-rolling pin
-pastry brush
-metal bench scraper (optional, but recommended) **I didn't have one. Would make it easier though!
-plastic wrap
-baking sheet
-parchment paper
-silicone baking mat (optional, but recommended)**I didn't have one. Would make it easier though!
-set of round cutters (optional, but recommended) ** I had one round cutter the big one, then used a 1/3cup measuering cup for the small one.
-sharp chef’s knife
-fork
-oven
-cooling rack

Prep Times:
-about 4-5 hours to prepare the puff pastry dough (much of this time is inactive, while you wait for the dough to chill between turns…it can be stretched out over an even longer period of time if that better suits your schedule)
-about 1.5 hours to shape, chill and bake the vols-au-vent after your puff pastry dough is complete

Forming and Baking the Vols-au-Vent

Yield: 1/3 of the puff pastry recipe below will yield about 8-10 1.5” vols-au-vent or 4 4” vols-au-vent

In addition to the equipment listed above, you will need:
-well-chilled puff pastry dough (recipe below)
-egg wash (1 egg or yolk beaten with a small amount of water)
-your filling of choice

Line a baking sheet with parchment and set aside.

Using a knife or metal bench scraper, divided your chilled puff pastry dough into three equal pieces. Work with one piece of the dough, and leave the rest wrapped and chilled. (If you are looking to make more vols-au-vent than the yield stated above, you can roll and cut the remaining two pieces of dough as well…if not, then leave refrigerated for the time being or prepare it for longer-term freezer storage. See the “Tips” section below for more storage info.)

On a lightly floured surface, roll the piece of dough into a rectangle about 1/8 to 1/4-inch (3-6 mm) thick. Transfer it to the baking sheet and refrigerate for about 10 minutes before proceeding with the cutting.

(This assumes you will be using round cutters, but if you do not have them, it is possible to cut square vols-au-vents using a sharp chef’s knife.) For smaller, hors d'oeuvre sized vols-au-vent, use a 1.5” round cutter to cut out 8-10 circles. For larger sized vols-au-vent, fit for a main course or dessert, use a 4” cutter to cut out about 4 circles. Make clean, sharp cuts and try not to twist your cutters back and forth or drag your knife through the dough. Half of these rounds will be for the bases, and the other half will be for the sides. (Save any scrap by stacking—not wadding up—the pieces…they can be re-rolled and used if you need extra dough. If you do need to re-roll scrap to get enough disks, be sure to use any rounds cut from it for the bases, not the ring-shaped sides.)

Using a ¾-inch cutter for small vols-au-vent, or a 2- to 2.5-inch round cutter for large, cut centers from half of the rounds to make rings. These rings will become the sides of the vols-au-vent, while the solid disks will be the bottoms. You can either save the center cut-outs to bake off as little “caps” for you vols-au-vent, or put them in the scrap pile.

Dock the solid bottom rounds with a fork (prick them lightly, making sure not to go all the way through the pastry) and lightly brush them with egg wash. Place the rings directly on top of the bottom rounds and very lightly press them to adhere. Brush the top rings lightly with egg wash, trying not to drip any down the sides (which may inhibit rise). If you are using the little “caps,” dock and egg wash them as well.

Refrigerate the assembled vols-au-vent on the lined baking sheet while you pre-heat the oven to 400ºF (200ºC). (You could also cover and refrigerate them for a few hours at this point.)

Once the oven is heated, remove the sheet from the refrigerator and place a silicon baking mat (preferred because of its weight) or another sheet of parchment over top of the shells. This will help them rise evenly. Bake the shells until they have risen and begin to brown, about 10-15 minutes depending on their size. Reduce the oven temperature to 350ºF (180ºC), and remove the silicon mat or parchment sheet from the top of the vols-au-vent. If the centers have risen up inside the vols-au-vent, you can gently press them down. Continue baking (with no sheet on top) until the layers are golden, about 15-20 minutes more. (If you are baking the center “caps” they will likely be finished well ahead of the shells, so keep an eye on them and remove them from the oven when browned.)

Remove to a rack to cool. Cool to room temperature for cold fillings or to warm for hot fillings.

Fill and serve.

*For additional rise on the larger-sized vols-au-vents, you can stack one or two additional ring layers on top of each other (using egg wash to "glue"). This will give higher sides to larger vols-au-vents, but is not advisable for the smaller ones, whose bases may not be large enough to support the extra weight.

*Although they are at their best filled and eaten soon after baking, baked vols-au-vent shells can be stored airtight for a day.

*Shaped, unbaked vols-au-vent can be wrapped and frozen for up to a month (bake from frozen, egg-washing them first).

Michel Richard’s Puff Pastry Dough

From: Baking with Julia by Dorie Greenspan
Yield: 2-1/2 pounds dough

Steph’s note: This recipe makes more than you will need for the quantity of vols-au-vent stated above. While I encourage you to make the full recipe of puff pastry, as extra dough freezes well, you can halve it successfully if you’d rather not have much leftover.

There is a wonderful on-line video from the PBS show “Baking with Julia” that accompanies the book. In it, Michel Richard and Julia Child demonstrate making puff pastry dough (although they go on to use it in other applications). They do seem to give slightly different ingredient measurements verbally than the ones in the book…I listed the recipe as it appears printed in the book. http://video.pbs.org/video/1174110297/search/Pastry

Ingredients:
2-1/2 cups (12.2 oz/ 354 g) unbleached all-purpose flour
1-1/4 cups (5.0 oz/ 142 g) cake flour
1 tbsp. salt (you can cut this by half for a less salty dough or for sweet preparations)
1-1/4 cups (10 fl oz/ 300 ml) ice water
1 pound (16 oz/ 454 g) very cold unsalted butter

plus extra flour for dusting work surface

Mixing the Dough:

Check the capacity of your food processor before you start. If it cannot hold the full quantity of ingredients, make the dough into two batches and combine them.

Put the all-purpose flour, cake flour, and salt in the work bowl of a food processor fitted with a metal blade and pulse a couple of times just to mix. Add the water all at once, pulsing until the dough forms a ball on the blade. The dough will be very moist and pliable and will hold together when squeezed between your fingers. (Actually, it will feel like Play-Doh.)

Remove the dough from the machine, form it into a ball, with a small sharp knife, slash the top in a tic-tac-toe pattern. Wrap the dough in a damp towel and refrigerate for about 5 minutes.

Meanwhile, place the butter between 2 sheets of plastic wrap and beat it with a rolling pin until it flattens into a square that's about 1" thick. Take care that the butter remains cool and firm: if it has softened or become oily, chill it before continuing.

Incorporating the Butter:

Unwrap the dough and place it on a work surface dusted with all-purpose flour (A cool piece of marble is the ideal surface for puff pastry) with your rolling pin (preferably a French rolling pin without handles), press on the dough to flatten it and then roll it into a 10" square. Keep the top and bottom of the dough well floured to prevent sticking and lift the dough and move it around frequently. Starting from the center of the square, roll out over each corner to create a thick center pad with "ears," or flaps.

Place the cold butter in the middle of the dough and fold the ears over the butter, stretching them as needed so that they overlap slightly and encase the butter completely. (If you have to stretch the dough, stretch it from all over; don't just pull the ends) you should now have a package that is 8" square.

To make great puff pastry, it is important to keep the dough cold at all times. There are specified times for chilling the dough, but if your room is warm, or you work slowly, or you find that for no particular reason the butter starts to ooze out of the pastry, cover the dough with plastic wrap and refrigerate it . You can stop at any point in the process and continue at your convenience or when the dough is properly chilled.

Making the Turns:

Gently but firmly press the rolling pin against the top and bottom edges of the square (this will help keep it square). Then, keeping the work surface and the top of the dough well floured to prevent sticking, roll the dough into a rectangle that is three times as long as the square you started with, about 24" (don't worry about the width of the rectangle: if you get the 24", everything else will work itself out.) With this first roll, it is particularly important that the butter be rolled evenly along the length and width of the rectangle; check when you start rolling that the butter is moving along well, and roll a bit harder or more evenly, if necessary, to get a smooth, even dough-butter sandwich (use your arm-strength!).

With a pastry brush, brush off the excess flour from the top of the dough, and fold the rectangle up from the bottom and down from the top in thirds, like a business letter, brushing off the excess flour. You have completed one turn.

Rotate the dough so that the closed fold is to your left, like the spine of a book. Repeat the rolling and folding process, rolling the dough to a length of 24" and then folding it in thirds. This is the second turn.

Chilling the Dough:

If the dough is still cool and no butter is oozing out, you can give the dough another two turns now. If the condition of the dough is iffy, wrap it in plastic wrap and refrigerate it for at least 30 minutes. Each time you refrigerate the dough, mark the number of turns you've completed by indenting the dough with your fingertips. It is best to refrigerate the dough for 30 to 60 minutes between each set of two turns.

The total number of turns needed is six. If you prefer, you can give the dough just four turns now, chill it overnight, and do the last two turns the next day. Puff pastry is extremely flexible in this regard. However, no matter how you arrange your schedule, you should plan to chill the dough for at least an hour before cutting or shaping it.

Steph’s extra tips:

-While this is not included in the original recipe we are using (and I did not do this in my own trials), many puff pastry recipes use a teaspoon or two of white vinegar or lemon juice, added to the ice water, in the détrempe dough. This adds acidity, which relaxes the gluten in the dough by breaking down the proteins, making rolling easier. You are welcome to try this if you wish.

-Keep things cool by using the refrigerator as your friend! If you see any butter starting to leak through the dough during the turning process, rub a little flour on the exposed dough and chill straight away. Although you should certainly chill the dough for 30 to 60 minutes between each set of two turns, if you feel the dough getting to soft or hard to work with at any point, pop in the fridge for a rest.

-Not to sound contradictory, but if you chill your paton longer than the recommended time between turns, the butter can firm up too much. If this seems to be the case, I advise letting it sit at room temperature for 5-10 minutes to give it a chance to soften before proceeding to roll. You don't want the hard butter to separate into chuncks or break through the dough...you want it to roll evenly, in a continuous layer.

-Roll the puff pastry gently but firmly, and don’t roll your pin over the edges, which will prevent them from rising properly. Don't roll your puff thinner than about about 1/8 to 1/4-inch (3-6 mm) thick, or you will not get the rise you are looking for.

-Try to keep “neat” edges and corners during the rolling and turning process, so the layers are properly aligned. Give the edges of the paton a scooch with your rolling pin or a bench scraper to keep straight edges and 90-degree corners.

-Brush off excess flour before turning dough and after rolling.

-Make clean cuts. Don’t drag your knife through the puff or twist your cutters too much, which can inhibit rise.

-When egg washing puff pastry, try not to let extra egg wash drip down the cut edges, which can also inhibit rise.

-Extra puff pastry dough freezes beautifully. It’s best to roll it into a sheet about 1/8 to 1/4-inch thick (similar to store-bought puff) and freeze firm on a lined baking sheet. Then you can easily wrap the sheet in plastic, then foil (and if you have a sealable plastic bag big enough, place the wrapped dough inside) and return to the freezer for up to a few months. Defrost in the refrigerator when ready to use.

-You can also freeze well-wrapped, unbaked cut and shaped puff pastry (i.e., unbaked vols-au-vent shells). Bake from frozen, without thawing first.

-Homemade puff pastry is precious stuff, so save any clean scraps. Stack or overlap them, rather than balling them up, to help keep the integrity of the layers. Then give them a singe “turn” and gently re-roll. Scrap puff can be used for applications where a super-high rise is not necessary (such as palmiers, cheese straws, napoleons, or even the bottom bases for your vols-au-vent).

Blackberries with Triple-Vanilla Honey Cream:

This is my own creation. And I must say, it is quite tasty....
You'll need:
-Blackberries, approx. 2 cups worth
- 1 TB Honey, I used local stuff, Wild Flower
- 1, 8oz tub of Mascarpone cheese
- 1 TspVanilla extract I made my own months ago and used it
- 1 Tsp Vanilla Sugar, I made mine months ago also and used it, simply a few vanilla beans in with regular sugar, although if you do not have vanilla sugar you can substitute regular sugar
- 1 vanilla bean, scraped and seeded (slit the bean in half, then use a sharp small knife to scrape out the black yummy goodness of seeds in there, but in your main mixing bowl

I put the honey in a warm water 'bath', by putting the honey jar inside a bowl of warm water. This will help liquify it a bit and make it easier to mix.

Get the cheese out and put on the counter, it needs to warm up just a tad so it is also easier to mix.

In the mixing bowl with the vanilla bean seeds, drop in the cheese, add the extract, sugar, and honey and mix all together. Taste to make sure it's sweet enough for you, I added a tad more honey, but that's me. :)

I recommend using a tupperware re-sealable bowl as your main mixing bowl, then yuo can simply put the lid on and refrigerate if not using all at once.

Next you will simply dollop some of the cream into your vols-au-vent and add in the blackberries.

Smoked Paprika and Garlic Goat Cheese Mousse:
- Approximately 10 oz of goat cheese, not already flavored (I bough 2 5.5oz packages)
- Minced garlic (I used 2 cloves)
-Miced shallot
-a pinch of Smoked Paprika
-a pinch of garlic granules or garlic powder
- Cream, start with 1-2 TB

I suggest letting the cheese get to room temp before mixing. Once it is, pour all ingredients into the same bowl and mix together. I start with about 1-2 tablespoons of cream, then add as necessary, about another 1-2 tsps. I just used my spatula, however you could use your stand mixer is you want a fluffier mousse! (I call it a mousse, cause it looks like it, however I don't know what the real definition of one is so sorry if I am wrong!)

My First CSA Box.

I recently moved into a *real* house and have been waiting to finally order thru my local CSA (Community Supported Agriculture.)

Here is my first box o' goodies! (psst I actually got this the other week, however just got around to posting. I'll try to post quicker this week!)
We received:
- a bunch of lettuce (made a salad)
- 3 zucchini, not pictured (made into 4 loaves of zucchini bread. delish.)
- 2 small cucumbers, not pictured. One went into the salad... other is in the fridge I think.
- beets, still in my fridge...whoops.
- fennel, also in my fridge....
- nectarines, made into nectarine pie and was absolutely fan-friggin-tastic. Made a 2nd one the next night.
- peaches, mmmm peaches. Sadly still on the counter.
- green beans, the boyfriend sauteed these up with some garlic & wine and bacon. yum.
- pluots, have yet to try or eat them.
- carrots, went into the salad.
- broccoli, in the fridge still

Looking forward to trying new things (like beets. and fennel. and pluots.)

Daring Cooks August Challenge

**Sorry for being a few days late for posting this!!

Olga from Las Cosas de Olga and Olga’s Recipes is the host for the August Daring Cooks Challenge. Olga chose a Spanish recipe, Rice with mushrooms, cuttlefish and artichokes by José Andrés, one of the most important Spanish Chefs at the moment.

He trained under well-known Ferran Adria at his three Michelin star restaurant El Bulli. José Andrés lives now in Washington DC and he owns several restaurants in Washington DC area (El Jaleo, Zaytinya, Oyamel…).

(Any notes or changes I made to the dish I'll use an asterisk ** )

Rice with mushrooms, cuttlefish and artichokes
Cooking time: 45 minutes
Equipment:

1 Chopping Board
1 knife
1 medium saucepan *Didn't need since I used woks
1 Paella pan (30 cm/11” is enough for 4 people. If not available, you may use a simple pan that size) ** I had neither, so I used one wok for the sofregit and one wok for the main dish
1 Saucepan *Didn't need since I used the woks

Ingredients (serves 4):

4 Artichokes (you can use jarred or freezed if fresh are not available) * I used a medium sized can of whole artichoke hearts, I recommend buying quartered if you see them!
12 Mushrooms (button or Portobello) * I just bought a package of pre-sliced, and saved 3/4 for the sofregit and the 1/4 for the 12 mushrooms in here
1 or 2 Bay leaves (optional but highly recommended)
1 glass of white wine
2 Cuttlefish (you can use freezed cuttlefish or squid if you don’t find it fresh) *Could not find cuttlefish, so I used squid. I also added in italian sausage.
“Sofregit” (see recipe below)
300 gr (2 cups) Short grain rice (Spanish types Calasparra or Montsant are preferred, but you can choose any other short grain. This kind of rice absorbs flavor very well) – about 75 gr per person ( ½ cup per person) Please read this for more info on suitable rices.
Water or Fish Stock (use 1 ½ cup of liquid per ½ cup of rice)
Saffron threads (if you can’t find it or afford to buy it, you can substitute it for turmeric or yellow coloring powder) *Did not have saffron or turmeric or coloring, so looked online and it said I could sub in ground mustard or curry, so I used both but half of each
Allioli (olive oil and garlic sauce, similar to mayonnaise sauce) - optional

Directions:

Cut the cuttlefish in little strips.
Add 1 or 2 tablespoon of olive oil in a frying pan and put the cuttl efish in the pan.
If you use fresh artichokes, clean them as shown in the video in tip #7. Cut artichokes in eights.
Clean the mushrooms and cut them in fourths.
Add a bay leaf to the cuttlefish and add also the artichokes and the mushrooms.
Sauté until we get a golden color in the artichokes.
Put a touch of white wine so all the solids in the bottom of the get mixed, getting a more flavorful dish.
Add a couple or three tablespoons of sofregit and mix to make sure everything gets impregnated with the sofregit.
Add all the liquid and bring it to boil.
Add all the rice. Let boil for about 5 minutes in heavy heat.
Add some saffron thread to enrich the dish with its flavor and color. Stir a little bit so the rice and the other ingredients get the entire flavor. If you’re using turmeric or yellow coloring, use only 1/4 teaspoon.
Turn to low heat and boil for another 8 minutes (or until rice is a little softer than “al dente”)
Put the pan away from heat and let the rice stand a couple of minutes.

Sofregit (a well cooked and fragrant sauce made of olive oil, tomatoes, garlic and onions, and may at times
different vegetables such as peppers or mushrooms)-

Cooking time: aprox. 1 hour
Ingredients:

2 tablespoons of olive oil
5 big red ripe tomatoes, chopped ( really get big ones. I used on-the-vine ones that were too small and the sauce wasn't as red as I hoped)
2 small onions, chopped
1 green pepper, chopped (optional)
4 or 5 garlic cloves, chopped
1 cup of button or Portobello mushrooms, chopped (optional)
1 Bay leaf
Salt
Touch of ground cumin
Touch of dried oregano

Directions:

Put all the ingredients together in a frying pan and sauté slowly until all vegetables are soft.
Taste and salt if necessary (maybe it’s not!)

Allioli is the optional part of the recipe. You must choose one of the two recipes given, even though I highly recommend you to try traditional one. Allioli is served together with the rice and it gives a very nice taste

*I was short on time and did the modern recipe. Mine turned o

ut more liquidy then thick like it should have been. Next time I'll do the traditional method.

Allioli (Traditional recipe)
Cooking time: 20 min aprox.
Ingredients:

4 garlic cloves, peeled
Pinch of salt
Fresh lemon juice (some drops)
Extra-virgin olive oil (Spanish preferred but not essential)

Directions:

Place the garlic in a mortar along with the salt.
Using a pestle, smash the garlic cloves to a smooth paste. (The salt stops the garlic from slipping at the bottom of the mortar as you pound it down.)
Add the lemon juice to the garlic.
Drop by drop; pour the olive oil into the mortar slowly as you continue to crush the paste with your pestle.
Keep turning your pestle in a slow, continuous circular motion in the mortar. The drip needs to be slow and steady. Make sure the paste soaks up the olive oil as you go.
Keep adding the oil, drop by drop, until you have the consistency of a very thick mayonnaise. If your allioli gets too dense, add water to thin it out. This takes time—around 20 minutes of slow motion around the mortar—to create a dense, rich sauce.

José's tips for traditional recipe: It's hard to think that, when you start crushing the garlic, it will ever turn into something as dense and smooth as allioli. But don't give up. It's worth the extra time and effort to see the oil and garlic come together before your eyes. Just make sure you're adding the olive oil slowly, drop by drop. Keep moving the pestle around the mortar in a circular motion and keep dreaming of the thick, creamy sauce at the end of it all.

Allioli a la moderna (Modern recipe)
Cooking time: 3-4 minutes
Ingredients:

1 small egg
1 cup extra-virgin olive oil (as above, Spanish oil is highly recommended)
1 garlic clove, peeled
1 Tbs. Spanish Sherry vinegar or lemon juice (if Sherry vinegar is not available, use can use cider or white vinegar)
Salt to taste

Directions:

Break the egg into a mixing bowl.
Add 2 tablespoons of the olive oil and the garlic cloves, along with the vinegar or lemon juice.
Using a hand blender, start mixing at high speed until the garlic is fully pureed into a loose paste.
Little by little, add what's left of the olive oil as you continue blending.
If the mixture appears too thick as you begin pouring the oil, add 1 teaspoon of water to loosen the sauce.
Continue adding the oil and blending until you have a rich, creamy allioli.
The sauce will be a lovely yellow color.
Add salt to taste.

José's tips for modern recipe:
(1) If you do not have access to a hand blender, you can use a hand mixer (the kind with the two beaters) or a food processor. If you use a food processor, you must double the recipe or the amount will be too little for the blades to catch and emulsify.
(2) What happens if the oil and egg separate? Don't throw it out. You can do two things. One is to whisk it and use it as a side sauce for a fish or vegetable. But if you want to rescue the allioli, take 1 tablespoon of lukewarm water in another beaker and start adding to the mix little by little. Blend it again until you create the creamy sauce you wanted.

Olga’s Tips:
(1) In Spain, rice is not stired as often as it is when cooking Italian risotto. You must stir it once or twice maximum. This tip is valid for all Spanish rice dishes like paella, arròs negre, arròs a banda…
(2) When cooking the alternative style you can change the cuttlefish or squid for diced potato.
(3) If you can’t find cuttlefish or squid, or you’re not able to eat them because of allergies, you can try to substitute them for chicken or vegetables at your choice.
(4) Sofregit can be done in advance. You can keep it in the fridge or even freeze it.

(8) To tone down the taste when you do it by hand in a mortar, then add an egg yolk. If you want to tone it down in the alternative way use milk or soy milk. Anyway, the best alternative way is the original oil and garlic alone.
(9) Allioli must be consumed during the preparation day and preserved in the fridge before using it.

Overall, I actually did not like this recipe. I really did not care for the flavors, perhaps I messed up the recipe during cooking somehow, but I won't make it again.

Daring Bakers- Milan Cookies

The July Daring Bakers' challenge was hosted by Nicole at Sweet Tooth. She chose Chocolate Covered Marshmallow Cookies and Milan Cookies from pastry chef Gale Gand of the Food Network.

My first challenge with Daring Bakers, and it was quite a delicious one!
My first attempt at the cookie part of these didn't turn out so well, they baked too skinny, but I still ate them :)

Here's her recipe:

Milan Cookies

Prep Time: 20 min
Inactive Prep Time: 0 min
Cook Time: 1 hr 0 min
Serves: about 3 dozen cookies

• 12 tablespoons (170grams/ 6 oz) unsalted butter, softened
• 2 1/2 cups (312.5 grams/ 11.02 oz) powdered sugar
• 7/8 cup egg whites (from about 6 eggs)
• 2 tablespoons vanilla extract
• 2 tablespoons lemon extract
• 1 1/2 cups (187.5grams/ 6.61 oz) all purpose flour
• Cookie filling, recipe follows

Cookie filling:
• 1/2 cup heavy cream
• 8 ounces semisweet chocolate, chopped
• 1 orange, zested

1. In a mixer with paddle attachment cream the butter and the sugar.
2. Add the egg whites gradually and then mix in the vanilla and lemon extracts.
3. Add the flour and mix until just well mixed.
4. With a small (1/4-inch) plain tip, pipe 1-inch sections of batter onto a parchment-lined sheet pan, spacing them 2 inches apart as they spread.
5. Bake in a preheated 350 degree oven for 10 minutes or until light golden brown around the edges. Let cool on the pan.
6. While waiting for the cookies to cool, in a small saucepan over medium flame, scald cream.
7. Pour hot cream over chocolate in a bowl, whisk to melt chocolate, add zest and blend well.
8. Set aside to cool (the mixture will thicken as it cools).
9. Spread a thin amount of the filling onto the flat side of a cookie while the filling is still soft and press the flat side of a second cookie on top.
10. Repeat with the remainder of the cookies.

I didn't tweak any of the original recipe, I think they came out great (taste-wise), they had a nice orange-kick to them. I think you can omit the orange zest if you wanted to add peppermint to the chocolate mixture to have mint milan cookies, or even I'm sure kahlua, bailey's, etc etc.

Overall, I really enjoyed the experience and can't wait for August's challenge!

The Making of a Bender Cake....

So. I have this friend....

He likes all things science, he wears funny witty science tshirts, he adores Tesla, he can quote Futurama like none other. And this friend is having a birthday today. And since I've been on a baking kick this past week, I thought I'd be adventurous and bake him a cake with one of his fave Futurama characters on it, Bender the robot.

Now, I didn't want to take the shortcut and buy a box cake mix and then decorate with Bender on it.
No, no. I wanted to bake my first ever cake from scratch. And so I did...

So I was Stumbling the other day and came acros Pinch My Salt's blog, and browsed it a bit more, and found her Red Velvet Cake recipe and KNEW that was the cake I had to make. Just the idea of cutting into a white(ish) frosted cake and then seeing the beautiful crisp red cake that lies beneath won me over.

So here's the recipe from Pinch My Salt, and I tell you how I made Bender...

Red Velvet Cake (a.k.a. Waldorf Astoria Cake)

2 1/2 cups sifted cake flour*
1 teaspoon baking powder
1 teaspoon salt
2 Tablespoons cocoa powder (unsweetened)
2 oz. red food coloring
1/2 cup unsalted butter, at room temperature
1 1/2 cups sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 cup buttermilk, at room temperature
1 teaspoon white vinegar
1 teaspoon baking soda

1. Preheat oven to 350 degrees. Butter and flour two 9-inch round cake pans or three 8-inch round cake pans.

2. Sift together the cake flour, baking powder, and salt into a medium bowl; set aside. In a small bowl, mix food coloring and cocoa powder to form a thin paste without lumps; set aside.

3. In a large bowl, using a hand mixer or stand mixer, beat butter and sugar together until light and fluffy, about three minutes. Beat in eggs, one at a time, then beat in vanilla and the red cocoa paste, scraping down the bowl with a spatula as you go. Add one third of the flour mixture to the butter mixture, beat well, then beat in half of the buttermilk. Beat in another third of flour mixture, then second half of buttermilk. End with the last third of the flour mixture, beat until well combined, making sure to scrape down the bowl with a spatula.

4. Make sure you have cake pans buttered, floured, and nearby. In a small bowl, mix vinegar and baking soda. Yes, it will fizz! Add it to the cake batter and stir well to combine. Working quickly, divide batter evenly between the cake pans and place them in a preheated 350 degree oven. Bake for 25-30 minutes. Check early, cake is done when a toothpick inserted in the center comes out clean.

5. Cool the cakes in their pans on a wire rack for 10 minutes. To remove the cakes from the pan, place a wire rack on top of the cake pan and invert, then gently lift the pan. Allow cakes to cool completely before frosting. Frost with buttercream or cream cheese icing (recipe below).

Recipe Notes: *Sift cake flour once before measuring, then sift again with the other dry ingredients per recipe instructions. Wear an apron and be careful with the red food coloring–no matter how hard I try, I always end up staining something! As you’re mixing the cake batter, use a spatula to scrape down the bowl frequently throughout the entire process.

Cream Cheese Frosting

16 oz. cream cheese (2 packages), softened
1/2 cup unsalted butter (one stick), softened
1 teaspoon vanilla extract
2 1/2 cups powdered sugar, sifted
pinch of salt

** You'll also need 2 tubes of black decorator's gel if you will be making Bender, and a transparency of Bender's head. Trust me.

With an electric mixer, blend together cream cheese and butter until smooth. Turn mixer to low speed and blend in powdered sugar, salt and vanilla extract. Turn mixer on high and beat until light and fluffy. Use immediately or refrigerate, covered, until ready to use. If refrigerated, the frosting will need to be brought to room temperature before using (after frosting softens up, beat with mixer until smooth.)

**Set aside about 1/2-1 cup of the frosting, you'll need some to make Bender grey!

So I had 2 9" pans so I went that route. I highly recommend buttering/flouring/etc'ing the cake very well, as I had a bit trouble getting them out of the pans afterwards. I also let them cool, then put them in the fridge overnight (I didn't have time for frosting that day...)

Also, since I can't seem to bake 2 exactly flat cakes, I had to 'saw' one of the cake tops so it'd be flat to put the other one ontop. It's still not perfect...but shhh. But I ate the sawed off cake parts and they were quite tasty.

I then put a nice glob of the frosting onto the 'sawed' cake top, then put the second cake ontop of the that. Now you do like Pinch my Salt did, and do a quick first layer of frosting all around the cake to catch those red crumbs and lock them in. I put the cake in the fridge for about 10-15 minutes. And while that was happening...

I browsed Google Images for a neat little image of Bender's head I could use for ontop of the cake. I found one to my liking, and then tweaked it a tad, made it a jpeg and put it on my USB drive, then headed on over to Staples (which I didn't know was open on July 4th, awesome.)
I had them print my Bender jpeg onto a transparency in black & white. It sounds weird, I know, but just keep reading.

Then went home, outlined the 'wrong' side of the transparency with the black decorator's gel and stuck it in the freezer to harden a bit. (It was 90 degrees here, and didn't want it melting)

Then you take the transparency and cake out of the fridge/freezer, and you simply put the 'wrong' side of the transparency onto the cake top. Don't smoosh it onto the cake, otherwise the black gel will bleed out, you are just wanting to get the basic outline of Bender onto the cake so you can later go back and re-draw it with the other black gel. Once you have Bender on the cake, you can get rid of the transparency, and I would suggest putting it back in the fridge for a few minutes.

While it's in the fridge, you can start to make the grey frosting. I didn't really measure how much black gel I put into the frosting, but just start with a few small squirts, mix, then compare against the un-tinted frosting and see if it's grey enough for you. If it's too dark, you can just add in a tad of the untinted frosting to lighten it back up.

Ok, so now take the cake out of the fridge and you want to re-draw the outlines of Bender with the black gel. Once you are done with that, you want to take the grey frosting and start filling in (very carefully) Bender's face. The only white parts on Bender are his eyeballs (minus the black squares for pupils) and his teeth (minus the lines), everything else is grey or black lines.

I don't have any cake decorating equipment, so it was pretty hard getting into small spaces (like the grey part under his eyes), so I used a regular butter knife's tip. It worked OK for me.

Once you're done you can marvel at your awesomeness then put it in the fridge to harden up a bit :)

So I just stumbled across this great monthly contest called the Daring Baker (and Daring Cook if you're not into baking), and I just registered/ applied to participate for it, wish me luck :)

I'm uber-excited because not only do I LOVE baking and cooking, but I think this will help me get out of my same-ol'-same-ol' cooking rut and also hopefully make my blog more, sicne you are required to do at least 8 our of 12 challenges in your year (i.e. I start July, so I must do 8 challenges by next July)

A few updates...

A few quick updates on LMKC...

- Opening Day for the Mukilteo Farmer's Market was fantastic in terms of the new location, the weather, and the crowds of people. There was a *gasp* ICE CREAM VENDOR! I forgot the name, I believe it is Whidbey Island Ice Cream or something along those lines.... I bought a pint of their Almond Vanilla ice cream, very good!

- This Wednesday is MY opening Day at South County Market, so go visit me!

- I'm working on a super-secret-project.
(Alright, not really a secret. And if I took pictures of it I would have shown you...
But LMKC will be screen-printing tshirts within the next few months, yay! I did a few test runs yesterday and am quite happy with them.)

-I've been on a bread-making trip these past few weeks, and will be sharing some photos and recipes of what I have made and what I want to make.
I love food.

- I want to do some craft shows in the Fall/Winter, so I've been scouring the Internet for local shows I can possibly sign up for. I'll be posting the dates of ones I apply for and get accepted to :)
(pssst.....I am seriously considering applying for UCU this year, yay! And if you are in Seattle and don't know what UCU is, go here , they have an August show, but I want to do the BIG December show.)

Streuseled Topped Sweet Potato Casserole

This is one of my fave recipes from Cooking Light magazine.

I've made many times before NOT for Thanksgiving, and it works pretty darn well with a lot of entrees. Plus it tastes even better as a leftover...

Streuseled Topped Sweet Potato Casserole

Assemble the potato mixture and sprinkle with the streusel, then freeze the casserole up to 2 weeks ahead of Thanksgiving. Thaw in refrigerator and bake as directed. Or cook just the potatoes a day ahead, mash and refrigerate and proceed with the recipe as directed (starting with the addition of half-and-half) the day you're serving the dish.

Add 1/8 teaspoon ground red pepper if you want to add a bit of heat to this sweet dish. **I never do, I like it sweet :)**

Yield
18 servings (serving size: about 1/2 cup)

Ingredients
14 cups (1-inch) cubed peeled sweet potato (about 5 pounds)
1/2 cup half-and-half
1/2 cup maple syrup
1 teaspoon vanilla extract
3/4 teaspoon salt
1 large egg, lightly beaten
Cooking spray
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 cup chilled butter, cut into small pieces
1/2 cup chopped pecans

Preparation
Preheat oven to 375°.
Place potato in a Dutch oven, and cover with water. Bring to a boil. Reduce heat; simmer 12 minutes or until tender. Drain.

Combine the half-and-half and next 4 ingredients (half-and-half through egg) in a large bowl, stirring with a whisk. Add potato to egg mixture; beat with a mixer at medium speed until smooth. Spoon potato mixture into a 13 x 9-inch baking dish coated with cooking spray.
Combine flour and sugar in a food processor; pulse to combine. Add chilled butter; pulse until mixture resembles coarse meal. Stir in pecans; sprinkle over potato mixture.
Cover and bake at 375° for 15 minutes. Uncover and bake an additional 25 minutes or until the topping is browned and the potatoes are thoroughly heated.

Christmas is 37 Days Away!

Man, it always sneaks up every year huh?

Well, this also means that the infmaous Black Friday is 10 days away!!!

If you're like me, I absolutely HATE large crowds of people. Hate it. And huge crowds of people who push and shove and make me spill my coffee all over my white jacket...

But this year WILL be different! I took the handmade pledge and am trying to buy ALL local and/or handmade products for gifts this year, and what's even better is that the lovely Heatherknitz has came up with a great holiday sale starting 11/27 and going until 12/1!

10 servings (serving size: 1 wedge)

**A few of the reviews on CL's website mentioned buying a pre-made crust if you are in a time crunch, I probably will do that....and I'll probably double the topping suggested since I like mine super crunchy on top!

Ingredients
Crust:
1 cup all-purpose flour
1/8 teaspoon salt
2 tablespoons chilled butter or stick margarine, cut into small pieces
2 tablespoons vegetable shortening
3 tablespoons plus 1/2 teaspoon ice water
1 teaspoon cider vinegar
Butter-flavored cooking spray

Filling:
1 tablespoon butter or stick margarine
1/2 cup packed brown sugar
3/4 teaspoon ground cinnamon
9 cups sliced peeled Granny Smith apple (about 2 3/4 pounds)
3 tablespoons all-purpose flour
2 teaspoons lemon juice

Topping:
1/4 cup all-purpose flour
1/4 cup packed brown sugar
2 tablespoons chilled butter or stick margarine, cut into small pieces
1/4 cup fat-free caramel sundae syrup

Preparation
Preheat oven to 375°.
To prepare crust, lightly spoon 1 cup flour into a dry measuring cup; level with a knife. Combine 1 cup flour and salt in a bowl; cut in 2 tablespoons butter and shortening with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle surface with ice water, 1 tablespoon at a time; add vinegar. Toss with a fork until moist and crumbly (do not form a ball).

Press mixture gently into a 4-inch circle on heavy-duty plastic wrap; cover with additional plastic wrap. Roll dough, still covered, to a 12-inch circle. Freeze 10 minutes or until plastic wrap can be easily removed.

Remove 1 sheet of plastic wrap; fit dough into a 9-inch pie plate coated with cooking spray. Remove top sheet of plastic wrap. Fold edges under; flute. Line bottom of dough with a piece of foil; arrange pie weights (or dried beans) on foil. Bake at 375° for 15 minutes or until the edge is lightly browned. Remove pie weights and foil; cool on a wire rack.

To prepare filling, melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Combine 1/2 cup brown sugar and cinnamon. Add sugar mixture and apples to skillet; cook 5 minutes, stirring occasionally. Remove from heat; stir in 3 tablespoons flour and lemon juice. Spoon into prepared crust.

To prepare topping, lightly spoon 1/4 cup flour into a dry measuring cup; level with a knife. Combine flour and 1/4 cup brown sugar in a bowl; cut in 2 tablespoons butter with a pastry blender or 2 knives until mixture resembles coarse meal.

Drizzle syrup over apple mixture; sprinkle topping over syrup. Bake at 375° for 30 minutes or until apples are tender. Cool on a wire rack.

If you live in Washington State (like I do...), Saturday October 4th is the LAST day to register to vote for the upcoming elections! (In WA the cut off date is 30 days prior to election day, which is November 4th)

Doesn't matter if you like McCain or Obama, just go register and vote.

Quick & Easy Recipes

Since I've been living on my own for a few months, I've noticed I don't cook as much anymore, and I LOVE to cook. However, I feel somewhat "guilty" for cooking myself a full dinner meal, when I'm the only one eating... (Kona my kitten doesn't count.)

So I decided in order to not only save money (frozen dinners add up), but also to help my waistline (frozen dinners add up there too), I'm going in search of some quick and easy dinner recipes. I can't guarantee this will be a weekly blog post theme, but I'll try my best!!

Tenderloin Steaks with Red Onion Marmalade:

(this is derived from Cooking Light's myrecipe website, so is the picture)

Serves 4, 1 steak and 1/3 c marmalade

* I know I know, why would I need 4 servings if I'm the only one eating?? I will cut the recipe in half, make 2 steaks and 1/2 the original sauce, then have lunch for work the next day.... Yes I am a genius*

Ingredients
Cooking spray (like Pam)
1 large red onion, sliced and separated into rings (about 2 cups)
2 tablespoons red wine vinegar
2 tablespoons honey
1/2 teaspoon salt, divided
1 teaspoon dried thyme
1/4 teaspoon freshly ground black pepper
4 (4-ounce) beef tenderloin steaks, trimmed (1 inch thick)

Preparation
1. Preheat broiler. (I love that this is a broiler recipe, since I live in an apartment and do not have a grill to bbq on!)
2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion to pan. Cover and cook 3 minutes. Add vinegar, honey, and 1/4 teaspoon salt to pan. Reduce heat, and simmer, uncovered, 8 minutes or until slightly thick, stirring occasionally.
3. Sprinkle remaining 1/4 teaspoon salt, thyme, and pepper evenly over beef. Place beef on a broiler pan coated with cooking spray (I will probably use foil to cover my broiler pan so its easier to clean later); broil 4 minutes on each side or until desired degree of doneness. Serve with onion mixture.

Hi Everyone!

September's been a busy month, with personal things (I'm taking a Chemistry class at the local college! This is one of the pre-reqs I have to finish up!), Etsyrain things (Puddle zine we are making, October show, local meetups), and of course trying to figure out why my computer won't let me load photos to Etsy... *sigh*

Mainly I'm stoked about our EtsyRain Handmade Arts How that is in EXACTLY 3 weeks! October 12, 2008 which is Sunday (and two days after my birthday...ahem) we'll be at St. Edward's State Park!

I'm really excited because this is my first craft show, not including the farmers markets.

There will be a Bake Sale going on, and all proceeds from that will help benefit the VSA Arts of Washington (which is a non-profit that helps bring the arts to people with disabilities), not to mention the INCREDIBLE Swag Bags that the first 50 people that walk thru will get for free! These nifty swag bags will include mini samples of all the shops that will be at the Handmade Arts Show.

And did I mention that I'll be BAKING stuff for the bake sale? I'm a good cook, so that's more then enough reason to show up....

Feel free to come on by if you are in the nieghborhood on October 12! (St. Ed's park is located in Kenmore, WA off of Juanita Dr and next to Bastyr University) Admission is free!

So yesterday was my local street team's 1st birthday, and I'm a nerd and totally forgot to post about it! *sorry!*

We are a wonderful group of crafters in the Seattle metro area who all discuss, talk, share, play, craft, and hang out together.

One year ago it all started with about 20 members, but as of yesterday, we are closing in 400!!!

Just to brag about how awesome EtsyRain is....

We are a very active street team, who fully supports one another. We are having our own EtsyRain craft show on october 12, 2008 (two days after my birthday I might add), so feel free to come on by! It will be at St Edward's State Park in Kenmore, WA.

For our birthday celebration, we decided to do a reverse birthday gift and send a big ol' box of etsyrain gooies from various shops to the Etsy Admins back in New York! We included a disposable camera so they could take pics of themselves while opening the gift and trying things on ;) We all hope they really enjoy our gift, and see just how talented the Seattle EtsyRain team is!!

EtsyRain has done a few shows already this year, and I can't wait for the October one!

The Etsy 10 City Promo Swap

Now I must admit, when I first saw AlwaysAmy's thread on the Etsy forums about the 10 City Swap I was scared. Mainly because I didn't HAVE any fliers or promos to really send out for someone to post on their local bulletin boards for me...
However, instead I took it as a new challenge to myself to create my own flyer for LoveMeKnot Creations.

So what is this 10 City Swap you ask??
It's where 10 people send the other 9 their shop's promos to post on bulletin boards. You in return, will recieve 9 other shop's promos that you must post on your local bulletin boards. The only rules are that you must send at least one promo and you must also post the promos on at least 2 different boards.

My Bucket List...

So I actually stumbled upon the Bucket List idea on Confession of an Apron Queen's blog via Wonderfully Sew Knit's blog. (Although, I already knew of the movie)
I think this is a GREAT idea to really help remind everybody to live life and to live for Today.

So, here is my Bucket List:
1. Travel. Especially Australia and Italy.
2. Open up my own cafe, with live music every night :)
3. To be my own boss, no more 9-5 for me!
4. To make a great speech in front of a packed house (<--- scarrry but some reason I want to do it)
5. Work at or volunteer at a Wildlife refuge.
6. To try and finish a marathon.
7. To try parasailing

I'm sure there's a lot more, but that's my List for now!

How to Install a Magnetic Snap

I am by no means a veteran at sewing, in fact I'm kind of a novice/amateur...but I had to learn how to install a magnetic snap, and here is how I did it. PLEASE read the entire post there are some notes I made at the end that are helpful :)
* Make sure you install a magnetic snap BEFORE sewing the lining into the outer fabric!

1. So to begin, make sure you have the male part, the female part, and the two "plates", as seen in the above picture.

2. Mark on the fabric where you want the snaps to go, but make sure it is the same on both sides of the lining of the purse so when it is all finished, the snaps will match up and close correctly. Now make small slits where the marks are, and you can use a no-sew glue or fray-check on the slits after you cut them to make sure they don't fray or rip.

3. Now poke the prong side through the slits, you want the prongs on the Wrong side of the fabric, and the smooth snap side on the Right side of the fabric, see my seams....:)

4. I cut out 2 small pieces of heavyweight interfacing, cut the same size slits in it, then placed it on top of the prongs on the Wrong side of the fabric. I also use a little fabric glue to hold the interfacing down.

5. Now you can put the 'plate' part over the prongs. In this picture I bent the prongs outward, away from each other. I actually NOW recommend bending them INWARD, facing each other. This is because after I finished this purse I could feel the prongs and am wondering if they will rip the lining fabric....so, Note To Self: Bend inwards. You can also see my fabric glue on the plate, this is just so the interfacing won't rip...not a necessity.

So here are a few things I learned along the way...

* Heavy interfacing was NOT enough, I actually went back and re-did the lining and ADDED a small piece of regular fleece ontop of each prong piece. This added extra security for me, knowing that every time I opened, and closed, and pulled apart the snaps I wasn't going to worry about the lining tearing or ripping...

* Bend the prongs INWARD, as to try to prevent them 'sticking' out if you bend outwards and to not rip the fabric.

* Fabric glue gets everywhere and if it gets on fabric it is very visible. So... use caution!

I hope this helps someone out there :) Feel free to add any of your tips also!

Hi Everyone :)

Sorry it has been MONTHS since I did a posting! A few changes in my personal life have happened and have been keepingme busy busy busy.

I did just buy a brand new camera, so hopefully when I figure out how to upload pics onto Blogger I will share some of my new items :) (This is also why I do not have a lot of my Etsy shop...)

But just a quick update on my life:
I will have my very OWN booth ath the 2008 Mukilteo Farmer's Market that is starting Wednesday June 4th. It will be next to the Rosehill Community Center of Lincoln Street in Mukilteo, WA, every Wednesday from 3pm-7pm until September 24th!

I don't think I will make it there every week, so here is my tentative schedule:

YAY! I'm so stinkin' happy right now! I went online and applied for my business license, and it seriously only took like ten minutes, but I even got to print out my UBI #. SWEET! I do still have to get a license for my city, and then any other city I plan on doing business in.... but I'll cross that bridge when I come to it. But, just thought I'd share how happy I am and how good it feels to be *almost* legit :)

First shipment

So I mailed out my first order today (well, techinically my second sale on etsy the first was local...) I wasn't sure on how to package it, so here is what I did. Also, what you can't see is a handmade circular tag that says my shop name and "instructions" on the backside, tied with ribbon and safety pinned to the top of the wheat bag. Let me know if you have any ideas to help improve it!!!

Show Some Love for Polka Dots

So I now have TWO items on my etsy website! Whoo hoo!

I just listed my second item, Polka Dot Love Muscle Relief Wheat Bag....

I figured it was a good fabric to go with since Valentine's Day is coming up. I do have it in two scents, Eucalyptus and Lavender and will be listing the Lavender one either tomorrow or Thursday. (Trying to spread the listings out rather then all in one day!)

I also finished another Chocolate Tiffany wheat bag with peppermint oil inside it. That will be listed in the next few days as well.

I'm trying for a goal of 4-5 items in my etsy shop by Valentine's Day, which means I just have to make at least one more bag and list the other three items and I reached my goal.....

I know it SOUNDS easy, but with my work schedule it's hard because I only live at home from Monday night thru Friday morning....so it leaves little time to actually craft.

I'm also looking into other scents, so I have more options just in case people want custom orders! I'm trying to find either Mandarin, Sweet Orange, or Tangerine.... So if you have any ideas on where to get these essential oils I would be most grateful :)

I was quite happy when i logged onto Etsy yesterday afternoon and saw my Chocolate Tiffany Wheat Bag sold! I do now have another item up for sale, I call it the Sherbert Paisley Muscle Relief Wheat Bag. ( I was advised by a fellow etsian to add Muscle Relief to my title to draw borwsers in....see? I do listen!)

I am working on some more with the other fabrics I have (posted down below).

I'm quite excited for a couple reasons, but one being that I accomplished a goal to list one item by Feb 1st!

So feel free to check out my shop and all and any advice/critiques are welcomed!

I call it the Chocolate Tiffany wheat bag. It is a wheat-filled bag with eucalyptus oil in it, and you can heat it up in the microwave for a nice warm treat for those stiff aches & pains you might have. The eucalyptus oil is great for any colds, flus, or sinus problems you might have since eucalyptus ia natural decongestant!

It Ain't A Secret Anymore!

SO, My best girl-friend, Ms. R I will call her, is getting married next month and we are throwing her a bachelorette party on Jan 26th in Seattle.

It will be a Victoria's Secret themed one with Tiffany & Co. colors (her wedding colors)... and vic's secret because, well...she'll be getting a lot of lingerie :)

So! I'm in charge of food and drinks, and this will be held inside a swanky Seattle hotel suite...

I need some ideas for food and drinks that could work with the theme... which is kinda hard to think of because I don't really know of any lingerie-related appetizers!
Any recipes/links/etc is much appreciated my fellow etsians and bloggers!

I'm looking for easy cocktails, finger-food if possible, foods that are light since we will be leaving to go clubbing and to bars later on...

NEW FABRIC!

So I broke down and bought some fabric at Joann's today because as soon as I walk by them I get all of these great ideas!

I bought some muslin, grey linene, some valentine's prints, the blue print and the circle print (don't they look like olives for a martini? very james bond-ish)

Swirls, dots, and Gladiators

So, I must admit something...
... I'm addicted to the new American Gladiators, just like I was with the original show. Stealth is from Bellevue, WA which I'm all about locals! yay!

So I'm attempting to post a couple pics on my apron I'm making...
I'm not sure on what to call it yet, but am open to any ideas!!

It is somewhat of a black and white floral/swirl design for the main fabric and black and white polka dots for the straps and pockets.

I will keep posting more photos of it as I go along! Feel free to critique and comment!

ahhh brides, Brides, and Seahawks!

Today I was at the Seattle Wedding Show (weddingshow.com) and have never seen so many brides and their mom's in one place..!
I work at a Chapel and have a booth there, and will be there tomorrow as well (Come say Hi if you're in Seattle, Bastyr University Chapel booth!)

I can't believe I missed the Seahawks WIN tonight in the playoffs!!! SAD! Luckily, one of the vendors had a TV and had the game on!! :)

I'm staying in Seattle for the weekend, so I don't have any updates on my aprons right now.
Keep checking back though!

I'm thinking of 'naming' them with people names.... not sure yet,but I think it's a cute idea instead of "Paisley apron" or "Black and white striped Apron"...what do YOU think?

Oh my goodness....
I tried kickboxing for the first time EVER last night, and I must say I AM BEAT! I don't think I have ever been this sore before. I went to a group class with Rayford's (my boyfriend) sister, Melissa, last night and her boss Denise. It was only an hour, and it went by super quick. But I am definitley going back! Tuesdays and Thursdays....

Apron update:
I am almost finished with my first apron! I have taken a few pictures as I have been sewing and pinning it, but not sure on how to post them on here......
